About the Creamery

The History

Founded in 2018, Rosemary and Thyme Creamery was started by a young woman by the name of Hannah Walker. I  have always dreamed of becoming a farmer but I wasn't quite sure what kind until 2016.  I started volunteering at a local dairy in Coopersburg, PA and fell in love with the lifestyle.  Here I was introduced to the world of cheesemaking.  After working there for another year I decided to specialize in sheep cheese.  So I packed up my bags and moved to Idaho where I mentored under a professional sheep cheese producer. Making my own cheese has been an exciting ride so far and there doesn't seem to be any sign of slowing down.
